Easy Indian Food – Potato Miracles

Potatoes are much feared by the weight-conscious because of their high calorie value but nevertheless, they form the base for many a quick and nutritious recipe, both in the homes of the rich and the poor. Besides, they have the added advantage of being a staple vegetable. Nearly all homes with the exception, perhaps, of the Jains, have potatoes in stock.
The potato belongs to the Solanaceae family, which paradoxically, includes plants like the tomato, an almost indispensable ingredient of daily cooking, as well as some of the most powerfully poisonous plants. Datura or deadly nightshade is one such example. The benign brown tuber in our kitchens, however, can also harbour poisons those with green patches must be studiously avoided as also the tiny sprouts on potatoes stored too long. The sprouts are incipient sources of poison.
I, personally, know a Gujarati family, which loves potatoes. They’re happy to eat them for all three meals, every day and if there aren’t any veggies in stock, one of the boys will go off to the market and come back with you said it, two kilos of potatoes. Their quick cooking solution is what they like to call potato “chips” or French fries, done with turmeric and chilli powder but that would be a disaster for us.
