Easy Indian Food – Saanas

Ingredients

1 1/4 cup rice
1 cup toddy
1 coconut (grated)
4 tbsp sugar
1/2 tbsp salt
Oil to grease idli type moulds

Method

Wash rice and drain in colander. Soak and leave overnight. Grind rice, using a little toddy occasionally, to make a fine paste.

Grind the grated coconut finely, also using toddy. Mix the ground rice and ground coconut. Add sugar and salt. Stir enough toddy to make a thick batter, cover and let it rest for 3 hours, preferably in the sun or a warm place. The mixture will ferment, and become almost double in quantity.

Grease the moulds lightly, and pour equal quantities of mixture into each mould. Steam for 20 minutes, till it becomes sponge-like and firm. Test with a knife/needle to see if the saanas are ready. If the mixture sticks, steam for a few minutes more. When the knife/needle comes out clean then the saanas are ready.

Demould the saanas, and serve with curried dish.
